{"id":113,"date":"2017-01-04T11:34:23","date_gmt":"2017-01-04T11:34:23","guid":{"rendered":"http:\/\/www.grabthisrecipe.com\/index.php\/2017\/01\/04\/longevity-noodles\/"},"modified":"2017-10-31T22:18:20","modified_gmt":"2017-10-31T22:18:20","slug":"longevity-noodles","status":"publish","type":"post","link":"https:\/\/www.grabthisrecipe.com\/index.php\/longevity-noodles\/","title":{"rendered":"Longevity Noodles"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>12\u00a0ounces thin fresh\u00a0noodles, like lo mein or tagliarini<\/li>\n<li>2\u00a0teaspoons toasted\u00a0sesame oil<\/li>\n<li>12\u00a0ounces boneless, skinless\u00a0chicken thighs, cut into 1\/4-inch-thick, bite-size slices<\/li>\n<li>1\u00a0tablespoon finely\u00a0shredded ginger<\/li>\n<li>1\u00a0teaspoon plus 1 tablespoon\u00a0Chinese rice wine or dry sherry<\/li>\n<li>1\u00a0teaspoon\u00a0cornstarch<\/li>\n<li>1\u00a0teaspoon plus 1 tablespoon\u00a0soy sauce<\/li>\n<li>\u00a0Salt<\/li>\n<li>\u00bc\u00a0teaspoon ground\u00a0white pepper<\/li>\n<li>2\u00a0tablespoons\u00a0peanut or vegetable oil<\/li>\n<li>\u00bc\u00a0teaspoon\u00a0red pepper flakes<\/li>\n<li>5\u00a0ounces (about 3 cups) thinly sliced\u00a0Napa cabbage<\/li>\n<li>4\u00a0ounces (about 2 cups) fresh\u00a0shiitake mushrooms, stems removed, caps thinly sliced<\/li>\n<li>\u00bd\u00a0cup finely shredded\u00a0scallions<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Bring a medium saucepan of water to boil over high heat and cook noodles until just done, 3 to 5 minutes, stirring to prevent sticking. Drain in a colander and rinse with cold water until cool, then shake well to remove water. Return noodles to pot, add sesame oil, and toss.<\/li>\n<li>Put chicken in a shallow bowl and add ginger, one teaspoon rice wine, cornstarch, one teaspoon soy sauce, 1\/4 teaspoon salt and pepper. Mix gently to combine. In a small bowl, combine remaining one tablespoon rice wine and one tablespoon soy sauce.<\/li>\n<li>Heat a wok over high heat until a bead of water evaporates almost on contact. Swirl in one tablespoon peanut oil, add red pepper flakes and stir-fry 10 seconds using a metal spatula. Push pepper flakes aside and add chicken, spreading in a single layer to maximize contact with the wok. Let cook undisturbed one minute, until chicken begins to sear.<\/li>\n<li>Stir-fry chicken and pepper flakes together, tossing in the wok, for a minute or 2 until just done. Remove to a bowl. Add cabbage and mushrooms and stir-fry one minute until just wilted but not cooked. Empty into the bowl with chicken.<\/li>\n<li>Reheat wok, swirl in remaining one tablespoon peanut oil, and add noodles. Stir-fry 30 seconds, moving constantly to heat through. Swirl soy sauce-rice wine mixture and add to wok along with chicken-vegetable mixture and scallions.
