{"id":20,"date":"2014-04-04T15:55:36","date_gmt":"2014-04-04T15:55:36","guid":{"rendered":"http:\/\/www.grabthisrecipe.com\/index.php\/2014\/04\/04\/ham-casserole\/"},"modified":"2017-10-31T23:38:37","modified_gmt":"2017-10-31T23:38:37","slug":"ham-casserole","status":"publish","type":"post","link":"https:\/\/www.grabthisrecipe.com\/index.php\/ham-casserole\/","title":{"rendered":"Ham Casserole"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>2 cups cubed peeled potatoes<\/p>\n<p>1 large carrot, sliced<\/p>\n<p>2 celery ribs, chopped<\/p>\n<p>3 cups water<\/p>\n<p>2 cups cubed fully cooked ham<\/p>\n<p>2 tablespoons chopped green pepper<\/p>\n<p>2 teaspoons finely chopped onion<\/p>\n<p>7 tablespoons butter, divided<\/p>\n<p>3 tablespoons King Arthur Unbleached All-Purpose Flour<\/p>\n<p>1-1\/2 cups milk<\/p>\n<p>3\/4 teaspoon salt<\/p>\n<p>1\/8 teaspoon pepper<\/p>\n<p>1 cup (4 ounces) shredded cheddar cheese<\/p>\n<p>1\/2 cup soft bread crumbs<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>In a saucepan, bring the potatoes, carrot, celery and water to a<\/p>\n<p>boil. Reduce heat; cover and cook about 15 minutes or until tender.<\/p>\n<p>Drain.<\/p>\n<p>In a large skillet, saute the ham, green pepper and onion in 3<\/p>\n<p>tablespoons butter until tender. Add to the potato mixture. Transfer<\/p>\n<p>to a greased 1-1\/2-qt. baking dish.<\/p>\n<p>In a large saucepan, melt the remaining butter; stir in flour until<\/p>\n<p>smooth. Gradually add the milk, salt and pepper. Bring to a boil;<\/p>\n<p>cook and stir for 2 minutes or until thickened. Reduce heat; add<\/p>\n<p>cheese and stir until melted.<\/p>\n<p>Pour over the ham mixture. Sprinkle with bread crumbs.
