{"id":459,"date":"2020-01-11T19:32:34","date_gmt":"2020-01-11T13:32:34","guid":{"rendered":"http:\/\/www.grabthisrecipe.com\/?p=459"},"modified":"2020-01-11T19:33:40","modified_gmt":"2020-01-11T13:33:40","slug":"instant-pot-mashed-cauliflower-with-garlic-and-chives","status":"publish","type":"post","link":"https:\/\/www.grabthisrecipe.com\/index.php\/instant-pot-mashed-cauliflower-with-garlic-and-chives\/","title":{"rendered":"Instant Pot Mashed Cauliflower with Garlic and Chives"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p>1&nbsp;large head cauliflower&nbsp;core removed and roughly cut into florets<\/p>\n\n\n\n<p>1\/2&nbsp;tablespoon&nbsp;olive oil<\/p>\n\n\n\n<p>4&nbsp;cloves&nbsp;garlic&nbsp;smashed<\/p>\n\n\n\n<p>1 1\/2&nbsp;cups&nbsp;chicken broth<\/p>\n\n\n\n<p>1\/2&nbsp;tablespoon&nbsp;butter<\/p>\n\n\n\n<p>1&nbsp;tablespoon&nbsp;sour cream<\/p>\n\n\n\n<p>1\/2&nbsp;teaspoon&nbsp;salt&nbsp;or to taste<\/p>\n\n\n\n<p>1\/4&nbsp;teaspoon&nbsp;fresh ground pepper&nbsp;or to taste<\/p>\n\n\n\n<p>1\/2&nbsp;cup&nbsp;freshly grated parmesan cheese<\/p>\n\n\n\n<p>1\/2&nbsp;teaspoon&nbsp;chopped fresh chives&nbsp;plus more for garnish<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\n\nInstructions<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Set instant pot to saut\u00e9.<\/li><li>Add olive oil to instant pot and heat it up.<\/li><li>Stir in smashed garlic cloves; mix and stir until garlic is golden brown on all sides, about 1 minute.<\/li><li>Stir in chicken broth and cook for 1 minute.<\/li><li>Turn off the &#8220;saut\u00e9&#8221; mode and place steamer basket inside your Instant Pot.<\/li><li>Transfer prepared cauliflower to the basket inside the Instant Pot.<\/li><li>Close the lid and set the valve to sealing.<\/li><li>Set on manual setting and cook on high pressure for 3 minutes.<\/li><li>Use the quick release function to release the pressure. Open up the lid half way and let stand 3 minutes.&nbsp;<\/li><li>Drain out all of the liquid and transfer the cauliflower and garlic to a food processor or blender. You can also put it in a large bowl and use a potato masher.<\/li><li>Add butter, sour cream, salt, and pepper to the blender; process until blended and creamy.
