Ingredients:
1 1/4 cups sugar
1 stick of butter/margarine
2 large eggs
1 1/2 cups mashed ripe bananas (3-4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups flours
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (optional)
Directions:
1. Preheat oven to 350 and grease bottoms of two 8 1/2 X 4 1/2 X 2 1/2 loaf pans or one 9 X 5 X 3 inch pan.
2. Mix sugar and butter in a large bowl. Stor in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in the nuts. Pout into pans.
3. Bake 8-inch loaves about an hour, 9 inch loaves about 1 1/4 hours or until toothpick inserted in center comes out clean.
4. Cool for 5 minutes and enjoy!
